The culinary infrastructure of ultra-wealthy Hong Kong is, by any objective measure, absurd — absurd in the best possible sense, meaning disproportionate to what any city of this size has any right to possess. Michelin stars accumulate here the way Rolexes accumulate in the safe rooms of the Peak: in quantities that would seem implausible elsewhere and are simply Tuesday in Hong Kong.
